Tequila Cocktails: Beyond Margaritas

Tamarind Margarita
INGREDIENTS
1 1/2 oz Blanco Tequila
3/4 oz Tamarind Syrup*
3/4 oz Lime Juice
1 Dash Aromatic Bitters
1-2 Dashes Mezcal Float
Garnish: 1 Dehydrated Lime Wheel
*Tamarind Syrup: In a saucepan over medium heat, combine tamarind paste and water. Stir until the tamarind paste is mostly broken down and well incorporated into water. Gradually bring mixture to simmer, allowing tamarind to soften further. Remove from heat, carefully straining mixture to remove solids. Stir white sugar into remaining mixture until fully dissolved. Store in airtight container and refrigerate.
Combine ingredients in a shaker (except mezcal). Add ice and shake for 10-20 seconds until cold. Strain into coupe glass, adding Mezcal float on top. Garnish with dehydrated lime wheel and enjoy!

INGREDIENTS
1 1/2 oz Reposado Tequila
1/4 oz Agave Nectar
1/4 oz Allspice Dram Liqueur
3/4 oz Lime Juice
1 Heaping Bar Spoon Fig Jam
1 Dash Aromatic Bitters
2 oz Ginger beer
Garnish: Candied Ginger
Combine ingredients (except ginger beer) in a shaker. Add ice and shake for 10-20 seconds until cold. Strain into collins glass over ice and top with ginger beer. Garnish with candied ginger and enjoy!

Pecan Old Fashioned
INGREDIENTS
1 1/2 oz Reposado Tequila
1/4 oz Pecan Syrup*
1 Dash Orange Bitters
2 Dashes Aromatic Bitters
Garnish: Orange Peel
*Pecan Syrup: In a saucepan over medium heat, combine 8oz chopped pecans, 5 cinnamon sticks, and 4 cloves. Stir continuously until mixture becomes fragrant and spices well toasted, adding 2 heaping bar spoons of brown sugar to caramelize. Gradually add 20oz of water, bringing to a simmer. Remove from heat and carefully strain mixture, stirring in 32oz of Demerara sugar until fully dissolved. Allow to cool and store in airtight container prior to use.
Combine ingredients with ice in a rocks glass. Stir vigorously. Garnish orange peel and enjoy!
