SERVES 1

Tommy's Corazón Margarita

INGREDIENTS


1 1/2 oz Tequila Blanco

3/4 oz Corazón Syrup*

3/4 oz Lime Juice

2 Dashes Thai Spiced Bitters

Garnish: Dehydrated Lime Wheel


*1 Part Passionfruit Puree, 1 Part Blood Orange Puree, 1 Part Pomegranate Juice, 2 Parts Water, 5 Parts Sugar. Stir Sugar into the juice mixture until dissolved.


Combine ingredients in a shaker. Add ice and shake for 10-20 seconds until cold. Strain into a coupe glass and garnish with a lime wheel. Enjoy!

Chai Noon

SERVES 1

INGREDIENTS


1 1/2 oz Gin

1/2 oz Apricot Brandy

1/2 oz Chai-Rooibos Syrup*

1/2 oz Pineapple Juice

3/4 oz Lime Juice

2 Drops Saline (4 Parts Salt to 1 Part Water)

1 oz Soda Water

1 Cucumber Slice

Garnish: Cinnamon Stick


*Make a strong Chai-Rooibos tea. Stir in equal parts sugar to tea until dissolved.


Muddle Cucumber slice in a shaker. Then, add remaining ingredients (except soda), add ice and shake 10-15 seconds. Strain into a tall collins glass over fresh ice. Top with soda water, garnish with cinnamon stick and enjoy!

SERVES 1

Roasted 'Mallow Old Fashioned

INGREDIENTS


1 1/2 oz Dark Rum

1/8-1/4 oz Roasted Marshmallow Demerara Syrup*

1 Dash Mole Bitters

1 Dash Spiced Orange Bitters

Garnish: Orange Peel Express


*Start with 6 marshmallows per pint of water. Roast the marshmallows over fire or bake in oven until the tops are brown (or roast more if desired). Stir the marshmallows into the water until they are mostly dissolved. Strain and add equal parts turbinado sugar to liquid and a 1/4 teaspoon of vanilla extract (add more to taste).


Combine ingredients in a mixing glass. Add ice and stir for 15-20 seconds. Strain into a rocks glass over fresh ice and garnish with an orange peel express. Enjoy!
