SERVES 1

Guava-Lavender Tommy's Margarita

INGREDIENTS


1 1/2 oz Tequila Blanco

3/4 oz Guava Syrup

3/4 oz Lime Juice

1 Dash Lavender Bitters

Garnish: Dehydrated Lime Wheel


Combine all ingredients in a shaker. Add ice and shake for 10-20 seconds until cold. Strain into coupe glass and garnish with lime wheel. Enjoy!

SERVES 1

Prickly Thai Margarita

INGREDIENTS


1.5 oz Hibiscus-Infused Tequila Blanco*

1/2 oz Mezcal

3/4 oz Prickly Pear Syrup**

3/4 oz Lime Juice

2 Dashes Thai Spice Basil Bitters

Garnish: Basil


*6 Tablespoons of Dried Hibiscus per 750ml bottle. Soak hibiscus in tequila for 1.5-2 hours. Strain and re-bottle. Soaking longer will make the tequila bitter.


**Prickly Pear Syrup: Combine 2 parts Prickly Pear purée with 1 part water. Warm over medium heat, do not boil. Add 1 part sugar to 1 part liquid and stir until dissolved. Let cool before use.


To salt the rim, moisten the edge of a rocks glass with a lime wedge, then roll the glass in tajín.


Combine all ingredients (except mezcal) in a tajîn-rimmed collins glass. Add crushed ice and swizzle for 10-15 seconds. Float mezcal on top and garnish with a basil leaf. Enjoy!

Mango Mint Cadillac

INGREDIENTS


1 1/2 oz Tequila Reposado

1/2 oz Orange Curaçao

3/4 oz Mango Syrup*

1/2 oz Lime Juice

4 Mint Leaves

6 Drops of Saline (4 parts salt, 1 part water)

Garnish: Mint Sprig


*Mango Syrup: Combine 2 parts Mango purée with 1 part water. Warm over medium heat, do not boil. Add 1 part sugar to 1 part liquid and stir until dissolved. Let cool before use.


In a shaker, muddle mint leaves. Then add all ingredients except orange curaçao, add ice and shake for 10 seconds until cold. Dirty dump into a rocks glass and add a few fresh ice cubes. Float orange curaçao on top, garnish with mint or a lime wheel Enjoy!
